1 cup Sunflower Mayo (below) or store-bought mayonnaise
1⁄2 cup Parmesan cheese
1⁄4 cup sugar
1-1⁄2 teaspoons freshly ground black pepper
1 large cauliflower, trimmed and cut into small florets (about 8 cups)
1 medium red onion, thinly sliced
1-1⁄2 cups shredded mozzarella cheese
6 slices bacon, fried until crisp and then crumbled
1⁄4 cup sunflower kernels

1/8 teaspoon cayenne pepper
1/4 cup refrigerated egg substitute
2 tablespoons vinegar or lemon juice
