Grandma’s Old-Fashioned Oatmeal Raisin Cookies

This recipe brings back great childhood memories! Grandma’s Oatmeal Raisin Cookies were always our favorite. They’re made with old-fashioned oats and we just substitute the shortening for butter now. 

Options: You can substitute raisins with chocolate chips. If you want to add some spice, add a 1/2 teaspoon each of ground cinnamon, allspice, and ground cloves.

Ingredients
1 cup (2 sticks) unsalted butter, at room temperature
1-1/2 cups sugar
1/2 cup packed brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups old-fashioned oats
1 cup raisins
Instructions

In a bowl, cream butter, gradually adding sugars, eggs, and vanilla. In a separate bowl, mix flour, baking powder, baking soda, and salt. Stir the dry ingredients into the creamed mixture until uniformly blended. Stir in oats and raisins. Cover the dough and refrigerate for at least 2 hours.

Preheat oven to 350°F and grease two large baking sheets. Roll dough into 2-inch-diameter balls and lay them onto the prepared sheets, leaving plenty of room for them to spread. Bake for about 22 minutes, or until lightly browned. Cool the cookies on the sheets for 1 to 2 minutes, then transfer to a rack and cool to room temperature.
