My favorite way to fix and eat sweet potatoes is for breakfast, although this process is great any time! I just bought a few pounds of smaller ones yesterday as they are fresh in the stores for the upcoming Thanksgiving dinner. I am lazy so I just micro wave mine after washing the skins. When done (soft to the fork) and still hot I cut one open, add a pat of butter, and a sprinkle of cinnamon sugar and eat with a spoon or fork. A great shot of vitamins as well! Warming, comforting, and satisfying on a cold morning with enough energy to get me through until lunch! Enjoy!
