Your zucchs do not need water every day, but you should probably water them once or twice a week, depending on rainfall, temperatures (high heat dries out containers), and humidity (dry air tends to dry out containers). Let the soil dry between waterings; stick you finger into it to see how deep it's dry.
As for pollination, you should see the effects of pollinating pretty soon after doing it. Repeat on new flowers especially if insects are not common in your area—say, for example, several stories above ground.
