You're probably looking at grubs that are doing this damage. It's breathtaking how quickly and completely the damage can happen. I had this happen every time I planted corn or beans in one of my gardens in NM. There are excellent, natural controls that can be used. Be sure to turn the soil in fall to expose these beasts over the winter and turn again in spring a couple of days before planting.
