I use a heat mat with a thermostat inside a plastic storage bin to cure my sweet potatoes every fall. Then, once the sweet potatoes have completed their heat and humidity stage, the heat mat goes back to seed starting duty for starting herb seeds to be grown in the house for the winter. Since that particular house is usually vacant, it is only heated to about 55°F for the cooler part of the year so the heat mats are used for most of the year.
