These simple cookies are delicious, and I will make them again. I used ground up steel cut oats (essentially coarse oat flour) in place of the quick oats. I also rolled the unchilled dough between sheets of plastic wrap and froze it for about an hour- then cut the cookies using a round cutter. Reply
