Slow Cooker Barbecue Brisket

This Slow Cooker Barbecue Brisket is deliciously tender and flavorful鈥 it’s slow cooked in a tomato-based chili sauce, beer, and brown sugar. 

Ingredients
3 tablespoons vegetable oil
2 large onions, halved and thinly sliced
3 cloves garlic, minced
2 teaspoons smoked paprika
1 teaspoon chili powder
1 bottle (12 ounces) beer
1-1鈦2 cups tomato-based chili sauce
1/2 cup packed light-brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon onion salt
1 teaspoon dried thyme
1鈦2 teaspoon freshly ground black pepper
1 beef brisket (3-1鈦2 to 4 pounds), trimmed of fat
Instructions
  1. Heat the oil in a large, nonreactive skillet over medium heat, add the onions, and cook for 10 minutes, or until soft. Add the garlic, paprika, and chili powder and cook for 30 seconds, stirring. Add the remaining ingredients, except for the brisket, and cook until heated through. Remove the skillet from the heat.
  2. Pour half of the sauce into a large slow cooker. Add the brisket and cover with the remaining sauce. Cover and cook on low for 8 hours.
  3. Transfer the brisket to a large casserole and ladle all of the remaining sauce over it. Cool to room temperature. Cover with plastic wrap and refrigerate overnight.
  4. Preheat the oven to 350掳F. Transfer the meat to a cutting board. Cut the meat across the grain into 1鈦3-inch-thick slices.
  5. Pour the sauce into a large saucepan and bring to a simmer. Return the sauce to the casserole and add the sliced meat. Bake for 30 minutes, uncovered. Transfer the meat slices to a platter and spoon the sauce over the meat.
