Mom’s Christmas Caramel Corn is a holiday favorite, blending sweet, buttery caramel and salty peanuts with crunchy popcorn for a perfect treat. It’s lovingly made, with each bite offering a festive mix of nostalgia and warmth, making it an irresistible snack during the holiday season! Ingredients
8 cups popped popcorn
1 cup salted peanuts
3/4 cup brown sugar
1/3 cup butter
3 tablespoons corn syrup
1/4 teaspoon baking soda
1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 275°F.
- Line a large, rimmed baking sheet with parchment paper and set aside. Grease a 13x9-inch baking dish.
- Pour popcorn and peanuts into prepared baking dish.
- In a saucepan over medium heat, combine brown sugar, butter, and corn syrup. Cook until mixture reaches 255°F on a candy thermometer. Remove from heat and stir in baking soda and vanilla.
- Pour caramel mixture over popcorn and peanuts. Stir gently to coat.
- Bake for 15 minutes, stir, then bake for 5 minutes more.
- Remove from oven and turn out onto prepared baking sheet. Cool completely, then break into clusters and store in a container with a tight lid.
