Above-ground crops are planted during the light of the Moon (new to full); below-ground crops are planted during the dark of the Moon (from the day after it is full to the day before it is new again).  See our Planting by the Moon dates here: http://www.almanac.com/plantingtable
Raised beds have less extreme up and down movements which seems as if it might be easier. We are not health professionals though . . . so we would advise you to consult someone with expertise in balance issues.
