Just be sure to preheat the cast iron first as it depends upon the type of wood and amount of red hot wood coals, etc. as to how much heat there is and how long to get the pans, skillets or dutch oven pots sufficiently hot. Make sure you stoke the fire well ahead of time and develop plenty of hot red coals because if the fire dies down and there are not enough coals then will have to remove your pan/pot with partially cooked food and take the time needed to get the fire stoked and going again.
