I like to use a lot of garlic in my cooking so as a result I take peeled garlic and put it in a food processor with the green tops of spring onions and a tablespoon of minced ginger. Once processed I add some canola oil and mince again and then pour into sterilized jars which I keep in the fridge. This means I have garlic all year round - and it keeps its flavor.
