You will notice them shriveling a bit after the first several days (maybe already! sorry for not responding sooner!). They will be edible that way: trim the ends and soak them in water for a little while (maybe 30 mins) before cooking (steaming, boiling, or roasting). But like any crop, the fresher, the better.
